Most veg biryani in this city is an afterthought — the meat version, minus the meat, plus a few carrots. Ours is cooked as its own dish, in its own pot, with its own masala. That distinction is the entire reason this page exists, and it is the thing vegetarian diners are actually trying to find out before they order.

A veg biryani, not a biryani minus the meat

The difference shows up in the seasoning. A meat biryani gets much of its depth from the meat itself — fat, bone, the juices that run into the rice during the dum. Strip that out and season the same way, and you are left with something flat and faintly sweet. So a vegetarian biryani has to build depth from somewhere else: heavily browned onion for sweetness and body, mint for lift, cashew for richness, and a hit of kewra water for the perfume the meat would otherwise have supplied. Different problem, different solution.

Cooked in its own deg

The question we get asked most by vegetarian customers is whether the veg biryani shares a pot with the meat. It does not. It gets its own copper deg, its own masala and its own dum — sealed with dough and finished over charcoal, exactly like every other biryani we cook, just without ever meeting meat stock. If it were finished in a pot the chicken had been in, it would not be worth calling vegetarian, and we would not put it on the board.

No onion, no garlic — the Jain version

We can prepare a Jain version — no onion, no garlic, no root vegetables — with a little notice. Say so when you order rather than on arrival: with the onion base removed, the masala has to be built differently from the start, so it is not something that can be adjusted once the pot is sealed.

Is it vegan?

The straight answer: the cucumber raita that comes with it is dairy, so leave it if you are vegan. For the biryani itself, message us before you order and we will tell you exactly what has gone into that day’s pot rather than guess on your behalf. We would rather answer honestly in a WhatsApp message than post a blanket claim on a web page.

Why it’s the cheapest plate we make

At AED 8 the veg biryani is the least expensive thing on the board, for the obvious reason: vegetables cost less than goat. It is not a smaller portion and it is not a loss-leader designed to move you onto something dearer — it is the same full plate, with raita, salan and lemon included, at the price the ingredients justify.
